How to Make Mini Protein Pizza Bites
Ingredients:

1 cup cottage cheese

½ cup all-purpose flour

1 tbsp Italian seasoning

1 tsp baking powder
-
½ tsp sea salt
-
Pizza sauce
-
Shredded mozzarella cheese
-
Chopped pepperoni (or your favorite toppings!)
Instructions:
1. Mix the crust:
In a medium bowl, stir together the cottage cheese, eggs, flour, Italian seasoning, baking powder, and sea salt until well combined.
2. Shape the rounds:
Line a baking sheet with parchment paper. Use a spoon to dollop the batter into small rounds, then spread them out slightly to form mini pizza crusts (you’ll get about 9–10).
3. Bake the crusts:
Bake in a preheated 400°F oven for 15 minutes, until the edges are set and golden.
4. Add your toppings:
Top each mini crust with pizza sauce, shredded mozzarella, and pepperoni (or whatever your heart desires).
5. Bake again:
Return the tray to the oven for another 5–8 minutes, or until the cheese is melted and bubbly.
These little guys are great on their own or served with a side salad for a quick and satisfying meal. They reheat like a dream and make fantastic leftovers, too.
