  • 1/2 cup milk of choice

  • 1/4 cup maple syrup

  • 1 tsp vanilla extract

  • 1 cup pumpkin puree

  • 2 cups rolled oats

  • 1 tsp baking powder

  • 1 tsp cinnamon

  • 1/2 tsp sea salt

  • 1/2 cup mini chocolate chips, divided

  • 1/2 cup pecans, chopped

Instructions:

  1. Preheat the oven to 350°F (175°C). Line an 8” x 8” baking dish with parchment paper, or oil it well to prevent sticking.

  2. In a large bowl, add the eggs, milk, maple syrup, vanilla, and pumpkin puree. Whisk until fully combined.

  3. Next, add the rolled oats, baking powder, cinnamon, and sea salt into the wet mixture. Stir well until the dry ingredients are fully incorporated.
