Use the ratios below, and have fun mixing it up!
What you need for slow cooker egg casserole

2 tsp avocado oil

1.5 cups milk of choice

1 tsp sea salt
-
1/4 tsp black pepper
-
3 cups day old bread, cubed (a crusty bread is preferable)

2 cups fresh spinach, chopped
-
1 red bell pepper, diced
-
2 green onions, chopped
-
4 slices of cooked bacon, diced
-
2 cups shredded colby jack cheese
How to prep and make this recipe

Oil the inside of your slow cooker to prevent sticking.

In a large bowl add the egg, milk, sea salt, and pepper and whisk until fully combined.

Arrange the bread cubes on the bottom of the crockpot in a single layer. Next, add the spinach, diced bell pepper, and green onion. Add the bacon pieces, 1.5 cups cheese, and lastly pour the egg mixture over everything. Press the bread and vegetables down, ensuring they are covered by the egg mixture. Sprinkle the remaining cheese on top, cover with the lid, and cook on low for 6-7 hours, or until the eggs are set.

Once the eggs are set, serve and enjoy!
How to store
Any leftovers can be stored in the fridge in an airtight container once cooled to room temperature.
Rewarm your breakfast in the oven, microwave or air fryer until heated through.
