If you’ve ever had a hard time peeling hard boiled eggs, you will love this new way to make a classic egg salad! Eggs are packed with nutrition and a wonderful part of any diet.

What you need to make egg salad

  • 6 Humane Harvest eggs

  • 3 tbsp mayonnaise

  • ½ tsp yellow mustard

  • ½ tsp sea salt

  • ½ tsp black pepper

  • ¼ tsp dried dill

  • 6 slices of bread

  • lettuce leaves

  • tomato slices

How to make no peel egg salad sandwiches

  1. Preheat the oven to 350 degrees F. Line a rimmed baking sheet with an oiled parchment paper. Crack the eggs onto the parchment paper. Bake for 15-18 minutes, or until the egg whites and yolks are cooked through.

  2. Let the eggs cool to the touch, then chop into small pieces and add into a bowl.

  3. MIx in the mayonnaise, mustard, salt, pepper and dill to make the egg salad.

  4. Between 2 slices of bread, add lettuce, tomato slices and a generous serving of the egg salad. Repeat with the remaining bread.

How to store

Egg salad can be prepped in advance. It will keep well in the fridge and stay fresh for up to 5-7 days. Store in an airtight container.

Tips for success

Prep a big batch - You can easily double or triple this recipe to make a large quantity of egg salad! If your pan seems crowded as you add the eggs, use 2 pans.

Chop the eggs small - If you find yourself with egg salad that easily falls out of your sandwich, try chopping the eggs finer. This will give the egg salad a creamier texture instead of a chunkier style.
