What You’ll Need:
- Chino Valley Ranchers’ egg whites
- Olive oil
- Diced sweet potato
- Chopped green bell pepper
- Minced garlic
- Chopped fresh spinach
- Chopped green onion
- Salt & pepper
- Chopped fresh parsley
1. Prepare the potatoes.
Heat the olive oil in a skillet over medium heat. Add the sweet potato, bell pepper and minced garlic, and cook until the potatoes are tender and crisp. Make sure to leave the skillet covered, but stir the ingredients occasionally.
2. Whisk the egg whites.
Once your potatoes are tender, add the chopped spinach and mix it around until it’s wilted. In a separate bowl, whisk your Chino Valley Ranchers egg whites with the chopped green onion and parsley until fully combined.
