Mexican Crescent Roll Breakfast Casserole

Mexican Crescent Roll Breakfast Casserole
This breakfast casserole starts with a tube of crescent roll as the base, then the flavors pile on. Once everything is baked together you’re left with a savory and delicious breakfast bake!
The combination of eggs and chorizo sausage gives this breakfast lots of protein, and it feeds a crowd!

How to customize it
We put a Mexican flair on this dish by using chorizo sausage and pico de gallo, but you can change the flavor super easily!
Try a Greek flavor by using Italian sausage and adding spinach and artichoke hearts. Feta is a great cheese option here as well.
Looking for traditional breakfast flavors? Use diced ham or your favorite breakfast sausage along with diced bell peppers and onions.
Use what you have on hand, and feel free to mix it up!
What you need for this crescent roll casserole

1 package refrigerated crescent rolls

1 tbsp chorizo sausage, cooked

1 cup milk of choice

½ tsp sea salt and pepper

1 cup cheddar cheese, shredded

1/3 cup pico de gallo
How to prep and make this recipe

Preheat the oven to 350 degrees F. Oil a 9” x 13” baking dish.

Open the tube of crescent dough and add it to the bottom of the baking dish. Press any seams together to make one seamless roll.

Add the chorizo sausage, the cheese, and the pico de gallo.

Whisk the eggs, milk, salt and pepper together, then pour over the chorizo and cheese. Bake for 35-42 minutes, or until a toothpick inserted into the center comes out clean. Allow a few minutes of cooling before serving and enjoying!
How to store
Any leftovers can be stored in the fridge in an airtight container once cooled to room temperature.
Re-warm your breakfast in the oven, microwave or air fryer until heated through.
