What You’ll Need
1. Whisk the eggs.
Crack your Chino Valley Ranchers’ eggs into a mixing bowl and beat them until they are completely mixed. Add some diced green chilies, depending on your spice intensity preference. Also, feel free to add a little salt, black pepper and/or cayenne pepper for some extra flavor.
2. Sauté the ham and potatoes.
In a skillet, add diced ham – just enough olive oil that will help you sauté. After allowing the ham to golden in color, add a large portion of frozen O’Brien potatoes to the skillet and allow it to completely sauté until it is brown.
3. Add the eggs and chilies.
Push over the ham and potato mix to one side of the skillet and then pour the mixed Chino Valley Ranchers’ eggs and green chili mixture to the other side of the skillet. Allow the eggs to cook, but do not allow them to burn by mixing the eggs slightly. When the eggs begin to have a fluffier texture, begin mixing them with the ham and potatoes on the other side.
4. Plate and enjoy!
Allow the skillet to cool for a few minutes, then put the meal on a plate and dig in!
