When we see viral egg recipes, we just have to try them and this one did not disappoint!

Grated eggs on toast are the new favorite way we top our avocado toasts. You get the perfect amount of soft egg in every bite. It’s savory, nourishing, and delicious!

Our Humane Harvest eggs used in this recipe come from hens raised in free-roaming environments where they can scratch in the sunlight and enjoy plenty of fresh air and water.

Foolproof hard-boiled eggs

The first step is to hard-boil your eggs. This fool-proof method is simple and will leave you with less cracked eggshells.

Place your eggs in a single layer in a large pot. Cover the eggs at least 1 inch above with cold water.

Bring the water to a boil, then turn off the heat and add a lid to cover the eggs. Leave the eggs in the hot water for 12 minutes and then quickly transfer the hot eggs to an ice bath to stop the cooking.

Peel and enjoy!

How to make make it

  1. Take 2 hard-boiled eggs and grate them using a box cheese grater.

  2. Add ½ an avocado to your favorite toast and mash it into a smooth paste. Spread it evenly. Sprinkle with a pinch of salt.

  3. Add the grated egg and top with a pinch of salt and pepper along with your favorite toppings - hot sauce, chili flakes, and chives were perfect here!

How to store

You can easily grate the hard-boiled eggs in advance and then keep them ready to use in an airtight container.  It will stay fresh in the fridge for up to 5-7 days.
