Huevos Divorciados is an authentic Mexican dish featuring two eggs each “going its separate way” through two different sauces. Traditionally, the eggs are served sunny-side up, but you can customize this recipe to have your eggs over-easy or over-hard. The best part? it’s a healthy way to start your day!

What You’ll Need

  • Chino Valley Ranchers eggs
  • Small corn tortillas
  • Butter, divided
  • Refried pinto beans, prepared & warmed
  • Tomatillo or green salsa
  • Tomato or red salsa

Optional Ingredients

  • Salt
  • Pepper
  • Red onion, thinly sliced
  • Cilantro, chopped

Preheat the oven to 400°F. Arrange the tortillas in a single layer on a large baking sheet and bake until crispy, which takes about 8 minutes. Remove from the oven and allow them to cool for a bit. Meanwhile, heat a large nonstick skillet over medium heat and melt enough butter to lightly coat the pan. Break a few Chino Valley Ranchers’ eggs one at a time. You may choose to opt for sunny-side up, over-easy or over-hard eggs for this recipe.

Cook your Chino Valley Ranchers eggs until the egg whites are completely set. Sprinkle them with salt and pepper and set aside. Spread the warm refried beans evenly over each tortilla. Section your tortillas in half. On one half, spoon tomatillo salsa and on the other half, sprinkle tomato salsa.
