Easy Earth Day Cookies
Whether you’re planning an Earth Day party with your neighborhood to clean up litter around town, or beginning to educate little ones about the importance of caring for our planet, these Earth Day cookies are a must make.
With their blue and green color to look like earth, they make a statement while also tasting incredible!

Once you’ve gathered your ingredients, you’re well on your way to enjoying a big batch of Earth Day cookies!
What you need to make earth cookies

2 sticks of unsalted butter, softened

1 ⅓ cups granulated sugar

2 tsp vanilla extract

2 ½ cups all-purpose flour

1 tsp baking soda

½ tsp sea salt

Blue and Green food coloring
How to make sugar cookies that look like the earth

Preheat the oven to 350 degrees F. Line 2 baking sheets with parchment paper.

In the bowl of a stand mixer with a paddle attachment (or use a hand mixer), add the butter and sugar and cream until fluffy. Add the egg and vanilla and mix for 1 minute.

Pour the flour, baking soda and salt in and mix until just combined.

Divide the cookie dough into 2 bowls and add blue food coloring into one, and green food coloring into the other. Mix well with a spoon or your hands (wear a glove to prevent color from staying on your hand). Add more color to get the dough to your desired darkness.

Scoop 1 tablespoon of each color and roll into a ball that looks like an earth. Place on the prepared baking sheet and repeat with the remaining dough, making sure there is space between each cookie. The recipe makes about 25 cookies, so you’ll need to bake in batches.

Bake the cookies for 11-13 minutes, until they spread, start to crackle slightly and look dry on the top.

Allow the cookies to cook for a few minutes before removing from the baking sheet to a wire rack to cool completely.
How to store
Your Earth Day cookies will stay fresh on the counter for up to 1 week. Be sure to place fully cooled cookies in an airtight container.
Cookies can also be stored in the fridge or the freezer for longer.
Tips for success
Make a big batch - You can easily double or triple this recipe to make a ton of earth cookies to share!
Prep the dough in advance - You can prepare the cookie dough up to 1 week in advance. Store it in the fridge in an airtight container and use as needed. Chilled cookie dough will need 1-2 minutes longer to bake.
