If you’re always rushing in the morning, you’ll be glad to know that this meal requires barely any prep time and makes the perfect addition to any breakfast or snack! Beyond the heart-healthy fatty acids and high protein count, this low-carb and fiber-filled meal will kick-start your day on a healthy note.
What You’ll Need
Begin by bringing a pot of water to a rolling boil. One by one, place your Chino Valley Ranchers eggs in the pot and boil for 8 minutes. Once they’re done boiling, plunge your eggs into a bowl of ice water to stop them from cooking and then set them aside.
Meanwhile, grab a medium bowl and add equal parts of cilantro, celery, Dijon mustard, mayonnaise and Sriracha to it. Once your eggs have cooled, peel and chop them and add them to the mixture. Make sure the mixture is combined well.
Toast your bread slices and mound the egg mixture evenly onto each slice. To add some texture, place some sliced tomatoes and red onions on top of egg mixture. Last but not least, add your avocado slices and garnish with cilantro, sea salt and pepper. Make sure to serve and enjoy immediately!
TIP: You may also choose to mash the avocados and spread it on the toast before adding the egg mixture. Either way will produce a yummy and flavorful meal!
