A Cinco de Mayo Breakfast You'll Want All Year: Salsa Verde Eggs

Made with our pasture-raised eggs, each bite is rich, satisfying, and full of fresh flavor. Tuck them into a warm tortilla, and you’ve got a breakfast (or brunch!) worth repeating all year long.
Ingredients:

½ cup salsa verde (store-bought or homemade)

Salt, to taste

2 tbsp shredded cheese (cheddar, Monterey Jack, or your favorite meltable cheese)

Crushed red pepper (optional)

Tortillas of your choice (corn or flour work great)
How to Make Salsa Verde Eggs:

Heat It Up:
In a medium skillet over medium heat, pour in ½ cup of salsa verde. Let it simmer for a few minutes until fully heated and bubbling. -
Add the Eggs:
Crack 2 eggs into small bowls (this makes it easier to gently slide them into the salsa). Add them to the skillet one at a time, and sprinkle with a pinch of salt. -
Top with Cheese & Cover:
Sprinkle 1 tablespoon of shredded cheese over each egg. Cover the skillet with a lid and let the eggs cook for 3–4 minutes, or until the whites are just set and the yolks are still a little runny. -
Serve & Enjoy:
Carefully lift the eggs from the skillet and tuck them into warm tortillas. Top with a pinch of crushed red pepper for a spicy finish, if desired.
