What You’ll Need
1. Sauté the spinach.
Add a small dollop of olive oil to a pan and sauté the spinach. Then, take the spinach out of the pan, place it on an oven-safe dish and set it aside, as you’ll come back to it later.
2. Cook the bacon.
Place the bacon in the same pan that was used to sauté the spinach. Add slices of bacon so they are evenly spaced out on the pan and add a pinch of salt for flavor. Allow the bacon to cook until it is sizzling and golden brown.
3. Add your Chino Valley Ranchers’ eggs.
Take an oven-safe dish and place a layer of cooked spinach in it, but be sure to leave space for the egg yolks to sit alongside it. Then, crack your Chino Valley Ranchers eggs and place them in the dish.
4. Sprinkle the bacon.
Chop the cooked bacon into bits and add it to the spinach. To prevent having a huge mess on your hands, try to avoid placing the bacon bits on the egg directly.
5. Bake the dish in a preheated oven (set to 400°F) for 12-15 minutes, depending on the size of your dish. The egg whites should be cooked through, but the yolk should still be soft. Then, remove the dish from the oven and let it cool for a few minutes.
