What You’ll Need:
1. Blend your ingredients.
Place your cottage cheese, Chino Valley Ranchers eggs, milk, vanilla extract, a pinch of salt, vegetable oil and all-purpose flour into a blender. Pulse the ingredients until they are smoothly mixed. You want to make sure that the crepe batter is not too thick, or that will get in the way of the signature fine texture of crepes. Pour the mixture from the blender into a mixing bowl.
2. Prepare your skillet.
Oil a heated nonstick skillet by adding a bit of vegetable oil. Use a clean cloth to spread a thin layer of the oil evenly around the whole skillet.
3. Cook your crepes.
Add batter to the skillet and swirl it around to completely cover the bottom of the skillet. Cook until the underside of the crepe is golden brown, usually for about 2 or 3 minutes. Loosen the edge of the crepe with a rubber spatula and quickly flip it. Allow the crepe to cook for about a minute longer. Repeat this process until you run out of batter.
4. Fold crepes and plate.
After all the crepes have been cooked, fold each in half and then in half again. Top them with some whipped cream and fresh berries, if you like, and enjoy!
