Egg Anatomy

  1. Thick Albumen – Excellent source of riboflavin & protein
  2. Shell – Outer egg covering made of calcium carbonate.  Can be white or brown, depending on breed of chicken.
  3. Chalazae – Twisted strands of egg white; anchors yolk to center of egg
  4. Shell Membranes – Two membranes (inner & outer) that surround the albumen.  Air cell forms between these membranes.
  5. Thin Albumen – Nearest to shell
  6. Yolk – Yellow portion of egg.  Color varies with feed of hen, but doesn’t indicate nutritive content.  Major source of vitamins, minerals & fat.
  7. Air Cell – Pocket of air formed at large end of egg, caused by contractions during cooling and after laying
